Did you know that the simple potato is High in Vitamin C, and other antioxidants! They may help in digestive health and improve blood sugar control. So why are we all so quick to kick the potato to the curb when it can bring so much joy!

Extremely versatile, inexpensive and a great source of energy!

So many interesting facts about the history of the potato dating back as far as 8000 BC in the South America Andes. It was not until the 16th century that the Spanish Conquistadors in Peru brought the potato to Europe. It then took nearly 4 decades for the potato to spread to the rest of Europe. The potato was then shared in all directions including China in the mid 1600's by Dutch Traders.

  • They provide invaluable fuel to the growing population in Europe in the 16th Century then brought to the America's.


Can People with Diabetes Eat Potatoes?


ABSOLUTELY YES!!!

Everyone can enjoy potatoes. The portion of starchy vegetables such as potatoes is important but also cooking methods, the other foods that are paired with your starchy vegetables, the amount of fibre, fat and protein which all work together to slow the digestion of potatoes to provide a lasting energy source.


For example, if you eat a large plate of mashed potatoes, it will definitely raise glucose levels much more quickly (otherwise known as the glycemic index)

Try a quarter plate of potatoes paired with protein, high fibre foods (fruits,vegetables, nuts/seeds and healthy fats).


Bottom line, the potato can be a very healthy choice, inexpensive and extremely delicious.
